What did I smoke?

I installed C29 backwards. Yeah I know I am an idiot. Please do not point that out again. Regulators got toasty, whole thing shut down and shut down the PS. What components do I now need to replace as a best estimate?

Apart from C29, maybe nothing. The most likely failure will be U5, but it may be fine. You should first verify that the PS03 isn't damaged. If the status LEDs light with no load, it's probably fine. Remove C29, crank R68 fully CCW, and apply power while measuring B-. If the voltage shoots to -28V or so, U5 is shorted. If you get nothing, U5 may be open, but so may D16. If you don't want to spend time troubleshooting, just replace U5 and D16 in addition to C29.
