I have seen some folks talking about making an input pad cable on here but I am not sure how they did it. I like to use the A12s on kick and snare but a lot of times, the signal is too hot coming in and my converters are clipping with the gain all the way CCW and the trim CCW as well. Is there a way to add some type of pad to the board or would an external cable or adapter be the easier method?

I'd do it with a few resistors and an XLR M-F barrel connector.
